Season or marinade your ribs with your desired flavours and/or rub and let them sit for 45 minutes (use this time to allow them to come up to room temperature)
Pre-heat your BBQ/Grill or other smoker/smoking chamber to 120c / 250f with an indirect method - we have used our Weber Q, then a layer of tinfoil with some holes and a rack to achieve an indirect heat)
Fill your Smokai Smoke Generator with your desired woodchip or pellets and light it
Place your lamb ribs in the BBQ/Grill or other smoker/smoking chamber
Smoke for 2-3 hours until the ribs are juicy and probe tender
Optional when using a dry rub - Spritz a couple of times turing the cook with a 50/50 mix of Apple Cider Vinegar and water
Serve hot and enjoy with a fresh salad and some hand-cut home-cooked fries!
