If you're going to cook a leg of lamb, then smoke it. This smoked leg of lamb recipe is bloody delicious and is very easy to prepare. Once you taste it and hear all "oooo's" and "wow's" from your family and friends, this recipe will become one of your favourites. For this recipe we've used a Smokai 1L Classic Smoke Generator and a Hooded Gas BBQ/Grill - you can adapt this to your preferred hot smoking solution.
 
                      Ingredients
- 
Leg of Lamb - Bone-in 
- 
Olive Oil 
- 
Your Favourite Mustard 
- 
5 Garlic Cloves 
- 
Fresh Rosemary 
- 
Fresh Thyme 
- 
Salt and Pepper 
Items/Equipemnt
- 
Smokai Smoke Generator 
- 
Smoking chamber with heat source 
- 
Quality Woodchip or Pellets (we love Manuka or Maple with Lamb) 
Directions
- Take all ingredients (minus the lamb) and create a wet rub - chop finely and mix or use a mortar and pestle 
- Coat your entire lamb leg with the wet rub and let it sit and come to room temperature 
- Pre-heat your smoking chamber to 120c / 250f 
- Fill your Smokai Smoke Generator with Woodchip and light it 
- Place your leg of lamb in the smoking chamber and close the lid 
- Smoke/Cook your lamb until it reaches an internal temps of 65c / 149f 
- Remove your leg of lamb and rest for 30minutes wrapped loosely in tinfoil 
- Slice and enjoy
