Frequently Asked Questions

  • Bolt it to the outside of your smokehouse, fill the hopper with dry hardwood chips or pellets, light it and set the smoke volume. Your Smokai Smoke Generator delivers steady, controllable wood-fired smoke for hours on one load.

  • Yes. All three Smokai Smoke Generators mount to a brick or block smokehouse with no adaptor, but due to the thicker walls of brick or block smokehouses, the 3L Magnum or 4L Monster Smoke Generators with an optional extended XL smoke outlet is likely to be required.

Drill a hole low on the smokehouse for the smoke outlet and two small holes for the fittings, fit the smoke outlet through the hole and secure the Smoke Generator with the hardware supplied.

  • The 3 Litre Magnum and 4 Litre Monster are the natural choices for most brick or block smokehouses. Choose between them based primarily on smokehouse size, the smoke volume required and how long you want to smoke on one load.

Turn on, light the wood and let Smokai deliver a controllable volume of fresh, natural wood-fired smoke to suit your food and your taste.

Installing Your Smokai

RATED 4.9 BY SMOKERS WORLDWIDE

Love my Smokai Smoke Generator. I also have a ring burner set up to generate a bit of heat. I have done two smokes and I’m really pleased with the results.

Robert B.

The Monster produces a ton of smoke and fills up the smoker! Made a great batch of sausage. I’m really impressed with it! High quality construction, the wood chips lit very easily and stayed burning producing great smoke for 6 hours with pump on high. Highly recommend!

Our philosophy

SMOKE EQUALS FLAVOR

Smokai’s product philosophy is simple: design the worlds best Smoke Generators and Accessories that give people control over natural wood-fired smoke that delivers authentic smokehouse flavour.

Every product is purposefully engineered using robust materials, modular construction and practical details that make it easy to use, maintain and adapt to different smoking setups. No unnecessary complexity. No disposable design. No gimmicks. Just dependable, beautifully made equipment built to perform season after season.

  • The Smoke Generator runs on 1/16 to 3/8 in (2 to 10 mm) wood chips, or 100% hardwood BBQ pellets (with no binders or additives), available from most BBQ stockists.

The gravity-fed design and controlled airflow convert that wood into smoke at the rate you set. Exact run time depends on your output setting, your wood (chips burn faster than pellets), wood variety and conditions.

Whatever you load, you’re measuring smoke in hours, not minutes.

  • Because we're relentless about quality: the materials, the component manufacturing, the quality control, the testing, the performance. Keeping production in our New Zealand factory is what lets us hold that standard at every step.

It shows in the details. Certified, heavy-duty 304L stainless steel, milled into tube on site to AS 1528.1, the standard for stainless steel tube in food processing and other hygienic applications. Every Smoke Generator passes through multiple checks at a tube manufacturing level, component production level, again as a completed assembly, and is then delivered assembled.

Even the few parts that we have to source offshore from the most reputable manufacturers are held to the same bar: air pumps custom-built to our specification to match the Smoke Generator, and independently certified high-temperature, food-safe silicone tube to feed the air to the burn.

We've built them this way since 2011. We do things right or not at all.

  • A fire needs constant feeding and monitoring. The smoke volume rises and falls as the fire burns up and down. Then there’s channelling the smoke through a trench or pipe to cool the smoke down to cold smoking temperatures.

A Smokai Smoke Generator mounts outside the smokehouse and holds the smoke volume you set, hour after hour. You choose the wood. The Smoke Generator keeps the smoke coming. No messy fire pit, no constant monitoring, no constant feeding.

  • All that is required to mount a Smoke Generator to your smokehouse are a few small holes. One for the smoke delivery tube (smoke outlet or baffle) and a couple of smaller holes for fittings that are used to secure the Smoke Generator in place.

  • Yes. You can either disassemble the Smoke Generator while leaving its built-in mount attached to the smokehouse, or quickly remove the entire Smoke Generator.

The Smokai-Modular-System™ is designed to make disassembly, ash disposal, cleaning and reassembly quick and straightforward. Its precision-engineered components lock together in seconds.

We recommend fixing the built-in mount to the wall with two masonry anchors (not supplied) and wing nuts. Threaded anchors allow for the wing nuts to be spun on and off, so the Smoke Generator can still be removed in seconds.

  • Yes. Smokai Smoke Generators are designed to mount directly to the side of most brick or block smokehouses. An extended smoke outlet tube (1 Litre Classic) or an XL Baffle (3 Litre Magnum and 4 Litre Monster) is available to extend the outlet through the wall, ensuring smoke is discharged only inside the smoking chamber.

Smokai 1 Litre Classic: Maximum Smokehouse Wall Thickness

* Smoking times vary depending on pump output, wood type (2-10mm chips or 100% hardwood pellets), size, variety, quality, manufacturer, altitude and other environmental conditions. Up to 12 hours using 100% hickory wood pellets at the lowest pump output.

MOUNTING YOUR SMOKE GENERATOR

Select a suitable location on the outside of your smokehouse to mount the Smoke Generator. It should be low down, easily accessible and positioned in a well-ventilated area.

Step 01

DRILL

Drill a 20mm (¹³⁄₁₆”) hole for the 1L Classic, or a 40mm (1 ¹⁄₂") hole for the 3L Magnum or 4L Monster smoke outlet. You may require an (optional) extra-long smoke outlet to pass though the walls. Drill and install suitable masonry expansion anchors into the block. Secure the Smokai using wing nuts, allowing it to be firmly mounted during use while remaining quick and easy to remove for cleaning, storage or maintenance.

Step 02

MOUNT TO YOUR SMOKEHOUSE

Pass the smoke outlet through the hole and fix the Smoke Generator with your preferred fittings.

Step 03

START SMOKING

Fill with your preferred smoking wood. Turn the pump to high. Light. Once lighted, leave burning for 5 minutes, then adjust to your preferred smoke volume.

Meet Tony, the man behind the brand

THE HARD YARDS DESERVE A REWARD

Earned on the water, up in the hills, or from a walk down to the local store and back. That effort should end in something worth remembering. Raw ingredients turned into smoked food that gets eaten, shared, and talked about long after the plate's empty.

That's where Smokai started. I'm a fisherman and a hunter, and smoking is still the best way I know to serve up your hard-fought fish or game or a good cut from the butcher. In 2010, we invented the first Smokai Smoke Generator: modular, stainless steel, built to last. All these year later, that design remains largely unchanged.

Our mission is to put the right tools, woods, resources and knowledge in your hands, so you get legendary results every time you cold or hot smoke your fish, meat or any other suitable food.

We do the lot ourselves, start to finish, in New Zealand. We're a bit obsessed with quality. Compare our gear to anything else and you'll see it.

Today Smokai has shipped to over 65 countries and is used daily by backyard smokers, pit masters, chefs, butchers and artisan smokehouses. Same passion behind it. Same respect for what nature provides.

Because legendary flavour begins with quality smoke.

Cheers, Tony
