If you have another brand/style/model of BBQ/Grill or Pellet Grill that is not covered by our above Quick-Mount™ adaptors, you will need to custom-mount/retrofit your new Smoke Generator.
This includes drilling a whole (or utilising an existing one - like a probe/exhaust port) for the Smokai Smoke Output Tube. We supply our Smoke Generators with M5 304L SS bolts which can also be used in custom mounting/retrofitting your Smokai Smoke Generator to your BBQ - additional holes for your M5 bolts may be required.
The hole diameter required for your Smokai Smoke Output Tube is:
Smokai 1L Classic Smoke Generator: 20mm or 13/16” minimum
Smokai 3L Magnum and 4L Monster Smoke Generators: 40mm or 1 1/2” minimum
This is creosote which is a by-product created from burning wood. It is produced during the combustion of all types of wood (logs, chunks, pellets, wood chip, sawdust, charcoal, etc) in any fire, BBQ, grill, stove, smoke generator or other wood-fired appliance.
Creosote is created from the gases that are produced when wood is burned and is predominantly made up of steam and vaporised carbon. When these gases solidify, they become creosote.
The main cause of creosote from burning wood in a smoke generator is the use of green, wood that has not been adequately kiln dried. Kiln dried wood burns more efficiently and hotter. If the wood is not dried, the gases cool more quickly and become creosote.
Using kiln dried woodchip or quality pellets is the best way of avoiding creosote deposits. This ensures that more gases are burnt in the hopper. Changing the brand of wood or the wood variety may also help as some varieties are more resonous than others.
Regardless of your appliance, it is unlikely that you can avoid creosote completely as it is a natural bi-product from burning wood.
It’s also important that you clean your smoke generator according to the instruction manual supplied. Removing any creosote deposits will keep your smoke generator performing well.

The process for mounting your Smokai Smoke Generator will depend on your specific application - please see the mounting section below for further guidance.
We invented the modular smoke generator. The Smokai-Modular-System means the Smoke Generator can be taken apart and reassembled with ease.
Safely empty the ash and thoroughly clean each and every component using warm water and detergent with a bottle brush. Once cleaned, the Smoke Generator can be reassembled in seconds.
If a deep clean is required, we recommend that you use citrus cleaner or oven cleaner. You will need to wash the Smoke Generator thoroughly afterwards.
There are a number of reasons why this may be happening:
Your smoking chamber becomes very hot but does not have enough airflow. The laws of physics dictate that pressure will build up inside your smoking chamber. This is one reason why good airflow is a requirement for any decent smoker. Without it, the air and smoke within the chamber have nowhere to go and the building pressure pushes back against the Smoke Generator's smoke outlet tube. If you're using a gas grill, you can prop the lid up slightly - some smoke escaping is a good thing.
You’re using sawdust or the incorrect-sized woodchip or your wood pellets are not 100% hardwood (ie, they have additives for flavoring).
You have soaked your woodchip prior to use. Your woodchip must be dry.
Your woodchip/pellets are getting 'hung up' in the hopper. This can happen from time to time and can be caused by a number of factors. If you think this is happening, tap the side of the hopper gently with any implement and the wood will fall to the burn at the base of the hopper.
Your hose tail which connects the air tube to the Smoke Generator is partially blocked.
Your air tube between the pump and the Smoke Generator is partially blocked.
The pump may be ‘inhaling smoke’ from the surrounding air. It is important that the pump is sucking in clean air.
Yes, each Smokai Smoke Generator includes pump in the box. You will need to select the pump before adding to cart.
To effectively light your Smokai Smoke Generator, please follow these steps:
Fill your unit with Woodchip or Pellets (please refer to the Woodchip & Pellets FAQ section for advice on choosing the right products).
Attach your high-temp air hose to your Air Pump and Smoke Generator.
Turn on your Air Pump and adjust to the highest setting.
Using matches ( if there is no wind), a lighter, or butane torch light both holes on the smoke generator (one on each side).
The most common reason for this occurring is the incorrect wood is being used:
Do not use sawdust. All Smokai Smoke Generators operate using a venturi effect, so fine dust will smother the venturi and therefore the burn within the hopper.
Ensure you only use the recommended-sized woodchip: If your woodchip is too large and an inconsistent size, it will have far too much air space inside of the hopper and will burn ferociously inside of your hopper.
We recommend that only 100% flavourwood pellets are used. These are wood pellets that are 100% natural varietal hardwood. For example, Hickory is 100% hickory wood, maple is 100% maple wood, etc. Many brands of pellets, such as Traeger, use one variety of hardwood (generally the least expensive that can be sourced) and then use flavourings to add different wood flavours. This flavouring causes the pellets to be 'sticky' and should not be used in your Smokai Smoke Generator.

Extra long baffles are available for the Monster and Magnum Smoke Generators. These replace the standard baffle on the Smoke Generator for mounting to a “thick walled” Smoke House such as an old commercial Fridge or concrete block smoke house.
These have been designed for smokehouse walls up to 8" or 190mm in depth such as those made from concrete block.

The length of time that a Smokai Smoke Generator will produce smoke for depends on a number of factors:
Air Pump Setting
The air pump setting dictates the amount of oxygen that is introduced to the burn inside of the hopper. The more oxygen fuelling the burn, the faster the burn and the shorter the smoking time. For example, a low pump setting would draw in less air (oxygen) through the two burner holes resulting in a slower burn and longer smoking time.
Type of Wood
Woodchip burns faster than hardwood BBQ pellets. Because of their inconsistent size and shape, more air/oxygen surrounds the chip which in turn fuels the burn. Woodchip is also less dense than hardwood BBQ pellets.
Hardwood BBQ pellets burn far slower than woodchips. They are made by compacting fine, 100% hardwood sawdust under extreme pressure (some manufacturers add soy oil and/or flavorings and these brands should be avoided). The resulting pellets are a consistent size and shape. They are also very dense, holding a significant amount of fuel in a small area. For this reason, smoking pellets, irrespectful of variety, burn more slowly than woodchips.
Variety of Wood
Different hardwood varieties come from different tree species each having their own unique qualities such as colour, flavour, aroma, density, and burn characteristics. These all have an influence when smoking food. The density of the hardwood has a significant impact on burn time. The higher the density, the longer the burn time. For example, Ironbark in Australia is one of the world's densest woods. Ironbark woodchip will burn far longer than Hickory, Maple or just about any other hardwood variety.
Woodchip Size
Woodchip of different sizes burn at different rates. The size and shape dictates how much air/oxygen surrounds the chips. The more space, the hotter the burn. It is important to only use 2-10mm sized woodchip in Smokai Smoke Generators.
Amount of Wood inside of the Hopper
Of course, a full hopper load will ensure the Smoke Generator will produce smoke for far longer than a hopper only partly filled. Always fill the hopper at least 50mm above the burner holes.
Airflow through your Smoking Chamber
All quality smokers require airflow. Your chosen smoking chamber when using a Smokai Smoke Generator is no different. Make sure your smoking chamber always has enough ventilation. Fresh smoke passing over the food and escaping is a good thing - enclosing every gap in your chamber so that no smoke escapes is not and will result in over smoked food. Inadequate airflow can also lead to back pressure into the Smoke Generator which must be avoided. If you’re using a hooded BBQ, simply propping up the hood slightly can make a big difference - this is ok!
Other factors
In addition, the temperature of your smoking chamber and the ambient air temperature can also have an impact on smoking time, although to a far lesser degree. We also recommend checking your hosetail and silicone tube for any blockages from time to time as well.
Maximum Smoking Times
The following are the maximum smoking times that you can expect when cold smoking, using a full hopper load of 100% Hickory pellets and operating the air pump on the lowest setting:
Smokai 1-Litre Classic Smoke Generator > 12 Hours
Smokai
3-Litre Magnum Smoke Generator > 24 Hours
Smokai
4-Litre Monster Smoke Generator > 32 Hours
Smokai does not provide any smoking time guidance for woodchip use. This is because there are so many variables that can affect the burn (smoking) time.
Woodchip & Pellets:
Woodchip for use in your Smokai Smoke Generator should be between 2-10mm in size, sieved to be free from dust, and kiln dried. This type of woodchip is commonly available in retail stores and comes in a range of varieties. Use only hardwood species when smoking food.
The following should not be used whatsoever in your Smoke Generator:
Wood chip larger than 10mm in size
Wood chunks
Wet/soaked wood chip
Fine sawdust
Softwood such as pine, etc
Wood chip from chainsaws or other machinery where the wood chip can be contaminated by oils, grease, etc.
We recommend that only 100% flavourwood pellets are used. These are wood pellets that are 100% natural varietal hardwood. For example, Hickory is 100% hickory wood, maple is 100% maplewood, etc. Some brands of pellets use one variety of hardwood (generally the least expensive that can be sourced) and then use flavourings to add different wood flavours. This flavouring causes the pellets to be 'sticky' and should not be used in your Smokai Smoke Generator.
No, you cannot use fine wood dust in your Smoke Generator. All Smokai Smoke Generators operate using a venturi effect, so fine dust will smother the venturi and therefore the burn within the hopper.
The cost of shipping woodchip internationally compared to the price we charge for our wood products would make it very costly. On top of this, many border authorities around the world do not allow wood products to enter their respective country without fumigation. This would not only destroy the product for its intended purpose but would hold up the delivery of other products in the consignment.
There are many suppliers of suitable woodchip in your market, so sourcing a suitable chip or hardwood BBQ pellets locally will not be an issue for you.
The practice of food smoking has been around for thousands of years, originating from our ancestors' realization that smoking could prolong the preservation of their precious hunted meat.
The terminology of “dirty smoke”, "blue smoke," “clean smoke” and "white smoke" has emerged relatively recently, primarily from the competitive BBQ circuit in the United States over the past 10-15 years.
Professional pitmasters and barbecue enthusiasts started to use the term "blue smoke" to refer to the smoke that is produced by burning wood logs, chunks or charcoal at high temperatures. The resulting smoke tended to be less visible and exhibit a bluish hue. This is because, at a high heat, particles within the smoke are instantly vaporized making the smoke less visible.
Smokai Smoke Generators like so many other smoking methods on the market, including many high-end commercial smoke generators, use commercially produced, kiln dried hardwood chip or 100% hardwood pellets (compressed hardwood sawdust) to produce fresh, wood-fired smoke (NOT charcoal, wood logs or wood chunks as explained above).
The smoke that is produced by Smokai Smoke Generators is perfect for "cold smoking" (where the ambient air temperature is below 30 deg.C) or applying a controllable volume (light, medium to heavy) of fresh, wood fired smoke when hot smoking. This is particularly useful when cold smoking, or hot smoking when variable smoke volumes are combined with the ramping and then holding the temperature at different levels of low-medium heat over longer periods, a method often used by professionals and referred to in the very best hot smoking recipes.
It is also important to note that the appearance of smoke doesn't necessarily indicate its quality or flavor impact on the food being smoked. Different types of smoking methods and heat levels are suitable for different types of food and the desired flavor profile.
For example, specific cuts of red meat may benefit from high heat and minimal visible smoke, whereas applying these conditions to fish, pork or poultry can result in overcooking and an unpleasant flavor.
In essence, there are various methods that can be used for hot smoking. Ultimately; determining the optimal hot smoking technique, wood type, wood flavor, heat level, and cooking time relies on the equipment available, type of food being smoked, personal preferences and budgetary considerations.
Smokai has thousands of customers around the world, including professional small goods companies, chefs and a recently retired World BBQ Champion, all who understand these contributing factors and demand the best results.
