Salt
Olive Oil
Smokai Smoke Generator
BBQ/Smoker/Smoke Chamber
Quality Woodchip or Pellets (Apple and Cherry are great options)
Matches or a lighter
Slice your tomatoes in half and toss with olive oil and salt
Pre-heat your bbq, smoker or smoke chamber to around 225f / 110c - indirect heat
Place your tomatoes evenly spaced out inside your bbq, smoker or smoke chamber.
Fill your Smokai Smoke Generator with quality wood or pellets - we suggest Apple or Cherrywood for this application.
Light your Smoke Generator as per instructions and smoke until the tomatoes are cooked through, and the skin wrinkles and breaks - this should take around 1.5 - 2.5 hours.
