Chop your potatoes into big chunks
Toss in olive oil and salt/pepper
Pre-heat your bbq, smoker or smoke chamber to around 225f / 110c - indirect heat
Place your potatoes evenly spaced out inside your bbq, smoker or smoke chamber.
Fill your Smokai Smoke Generator with quality wood or pellets
Light your Smoke Generator as per instructions and smoke until the potatoes are cooked through. They should be crispy on the outside and soft on the inside. After 60 mintues, check your potatoes every 10 minutes.
