New ZealandHaving bought wood chips elsewhere I had read difficulty with “bridging” were the chips would not fall down easily, into the burning zone. I rectified this by purchasing, on line, from Smokai a couple of bags off their smallest Manuka chips. This immediately fixed my problem, and I was able to leave my Smokai smoker for a few hours. The main problem I have with my smoker is the build up of Creasote on the inner surfaces of the smoker. The smoker should be cleaned regularly to work efficiently. ( it’s easy enough to strip down. and clean with home made tools kept just for this job ) I smoke my own Bacon ( for a week or more ) and I now realise I should have purchased the larger version!
