Wild Venison Is a well flavoured dark meat that lends itself well to smoking and drying.  As venison is a lean meat it makes great Biltong and Jerky and with the addition of a little well-marbled pork or fat, makes fantastic sausage and salami.

The time of smoking and wood flavour is a matter of personal preference.
