Both Lamb and Goat are robust meats with strong flavours that can handle being well seasoned and smoked.  A slow smoked Lamb or Goat joint that if falling off the bone with tenderness and is rich in smoky flavour is just fantastic.

For each recipe we recommend a brine or dry cure which is detailed.  The smoking time and wood flavour is a matter of personal preference.
